In winemaking, autolysis speaks to the complex chemical reactions that take place when a wine spends time in contact with the lees (dead yeast cells) after fermentation. ⁠
⁠
These reactions produce amino acids and release proteins and carbohydrates into the wine. Autolytic describes the characteristics autolysis imparts, such as richness and creaminess, as well as aromas of bread dough, toast or brioche. Autolysis is a key element in the traditional method of making sparkling wine, such as Champagne.⁠
